Sjigan

Sjigan is a traditional food of the Essep people, made from fermented meat. It is consumed particularly in rural and mountainous parts of Gildot and Hesjbagaaia.

sjigan is often an incomplete source of protein, so is traditionally eaten in combination with other staple foods.

Sjigan is traditionally made in stone or clay pots which are sealed and left to ferment. The resulting product varies in texture from a soft pâté to a firm, sausage-like consistency.
