Butternuts grow in a hard gourd. When mature, the gourds fall and split to reveal the hard nuts inside. The nuts are surrounded by a thick, oil gel, which gives the fruit its name. The gel is sweet and nutritious, while the nuts are hard, but contain a rich, oily and mellow-sweet meat.

Butternuts are simply eaten whole, or used in a wide variety of desserts and sweetmeats. When pulverised with milk or water, they make a nutritious drink, a popular restorative for the sick and infirm. Butternuts also yield a light fragrant oil, used in cosmetics, paint, and as a lubricant in fine machinery. Butternut oil is sometimes used in lamps or to make candles, burning with a pleasant, buttery or honey aroma.
